My darling bought me a Kitchenaid mixer for my birthday last year and it still remains to be one of the best presents I’ve ever received! With Easter the following weekend, I decided to give Mary Berry’s Easter Pavlova a whirl and I basically won Easter so cheers for that Mary! The Kitchenaid was christened and it practically had to have a cigarette after making the beauty above!
I adore lemons. And being half Irish- butter! So making the lemon curd from scratch was amazing (and a bit sickly after the 47th spoonful to see if it was still lemon curd!)
I won’t mess with Mary but my only tip would be to use a medium plate as a stencil and not a big one- the mixture goes further and allows for extra piping which creates a more impressive pud. Some of the ones I’ve seen online look a bit flat!
I’ll list Mary Berry’s recipe below and it really is clear. However, my favourite pavlova recipe is BCC Goodfood’s ‘Strawberry Pavlova’- I have always got a perfect meringue with it.

Presentation is wonderful. ..colour is beautiful…taste is AMAZING. ..crispy..chewy ….floaty..and the lemon curd is sublime…
