For Valentine’s Day I thought I’d make a simple afternoon tea. I made life difficult for myself by trying to make macarons which were gross as per. God I hate them.
Apart from that, it was proper tasty. The scones were from a standard recipe served with clotted cream and jam. I dabbled with loose leaf again and managed it- I either make it too weak or way too strong (the leaves scut out of the pot like a colonic). Plopped some salmon on wheaten bread, cream cheese, lemon and dill- easy peasey. However, this post is about my friend’s amazing coronation chicken sandwiches- or after a night out we fondly knew it as ‘Cozza Chicken’. It really makes the best tea when you’ve tied one on after work and you don’t want to be surrounded by sharp knives!
Jennie’s Cozza Chicken
- Bagels
- 1 chicken breast, cooked, chopped and chilled
- Mayonnaise
- Curry powder
- Sultanas
- Rocket
- Mix it all!
- Stick some rocket on a toasted bagel.
- Plop the mixture on.
- Enjoy and wake up hangover free!
