Well that’s just brilliant. I thought adding pizza to my repitoire would be a hilarious way to slim down for the impending summer holiday! I checked my calendar and there is no hormonal excuse to blame this on! Although it was delicious, it goes against my light week/being Henry VIII at the weekend. Plus I try not to eat meat during to week out of respect to animals, the environment and my colon. I’m not even going to discuss this little beauty above but talk about a less than 300 cal belly buster that is:
Homemade Marinara sauce and courgetti
This recipe is great because it’s less than 300 cals for a large portion and it’s tasty. If you hold the Parmesan, it can be vegan too.
- 2 packs of courgetti (1 per person)
- 1 kg of really ripe and viney tomatoes
- 4 cloves of garlic
- Oregano (dried)
- Rosemary (a few fresh sprigs)
- A pinch of sugar
- 4 tbsp of olive oil
- Salt and pepper
- Halve all of the tomatoes and toss them in all ingriedients (apart from the courgetti)
- Cook for 2 hours at 150 c seed side up on a tray lined with baking paper.
- Ramp up the heat for twenty more mins (210) to intensify the colour.
- Put the mixture in a blender and blitz it until smooth.
- Pan fry the courgetti in a bit of salt and olive oil for four mins until softer.
- Mix some of the marinara sauce and serve with Parmesan and parsley.
Tip: this sauce keeps well in the fridge for a couple of days or freezes well.
