Who feels like an over-fed Christmas turkey right now? Every time I think I can’t eat anymore- I immediately get peckish again! And don’t even mention the level of alcohol we’ve been keeping in our bodies in order for the alcohol blues to NEVER kick in. This recipe is a good one for weaning one off three thousand calorie sittings- it’s basically an unhealthy salad and it feels festive enough to not have that cliche ‘new year, new me’ feel to it.
- Pork loin steaks
- Golden breadcrumbs- half a pack
- Sunflower oil (about 150ml)
- Preheat the oven to 200 oC
- Tenderise the pork with a mallet or a rolling pin- just bash it on both sides until it’s less than half an inch thick.
- Put the bread crumbs on a plate and press the pork hard on both sides until the bread crumbs have stuck to both sides.
- Heat the oil and fry the meat on both sides until golden.
- Crisp up in the oven for about 10 minutes.
Schnitzel Sauce
- 150ml of tomato ketchup
- 1 large clove of garlic
- 1 tsp dried parsley
- 1 tsp honey
- Crush the garlic, mix the ketchup, parsley and honey.
- Leave for about an hour for all the ingriedients to blend.
Winter Salad
I saw this recipe on Lorraine Pascal’s food program years ago and it’s delicious. I can’t remember the exact method but this is the one I do:
- 100g Stilton
- Four slices of Parma ham
- 1 pear
- 10 walnuts
- 50ml balsamic
- 20ml olive oil
- 1 tsp honey
- Mixed leaf salad
- Crisp the Parma ham in a dry, hot frying pan for a minute on each side.
- Chop the Stilton, walnuts and pears into cubes.
- Reduce the balsamic in a hot pan and warm the pears
- Take the pears out of the pan and switch the heat off.
- Put the oil and honey in the warm pan.
- Crumble the Parma ham, cheese, walnuts onto the lettuce, put the pears onto the salad and sprinkle a few drops of the dressing over it.
